making banana bread with oliver

oliver might be the love of my life

don’t get excited, this is not a man-friend.

this is the delightful three-year-old i babysat today.

we made banana bread. it was AWESOME. baking with little kids…er. that sounds like they’re the main ingredient. sorry. having a little kid help you bake (better!) is so much fun. join us! pre-heat to 350.

here is everything you need.

in a big bowl, mix together one cup whole wheat flour, one cup all-purpose. oliver was in charge of scooping up the all-purpose. “why are you holding the container, tess?” “no reason, oliver, no reason at all”

in a mixer (standing! *swoon*), mix together 1/2 stick butter and 1 cup sugar. (sidenote: my first reaction was “only half a stick of butter?”, because i am of the policy that more butter is always a good thing)

beat in two eggs

sorry. i love the standing mixer. i have said this before, and i stand by this statement – i would totally accept a standing mixer in lieu of a ring for an engagement. i’m sure there are dozens of men writing that down now.

add in about 1.5 cups mashed ripe bananas (3 bananas), 1/2 cup low-fat plain yogurt, and 1 teaspoon vanilla extract.

sigh. i love this toy.

oliver adds in the flour mixture. we stir until the mixture is just mixed….

pour the batter into a greased loaf pan, bake for about an hour – or until a toothpick inserted in the middle of the bread comes out clean.
