mocha mousse/outdoing myself

if anyone ever wonders why i enjoy baking, it is because baking is pretty much the only activity i genuinely think i excel at.

i run, but not frequently, and my knees get all achey, and i get wheezy, and sometimes i pass out.

i don’t stay in touch with people very well.

i have a knitting project that is literally going to take me like 5 years to complete since i keep forgetting it is there.

etcetera.

but baking? damn. i rock.

today i made mocha mousse. very caffeinated. very yummy.

melt about 1/2 stick butter in a saucepan with 1 cup semi-sweet chocolate chips, and a teaspoon (or three) of instant coffee crystals.

soooooooo delicious. i basically added coffee until i could taste it, which might not be the wisest method, but i never claimed to do anything because it was a wise decision. gut instinct, that’s me!! (little grown-up voice: you nincompoop, that is a lie – you overthink EVERYTHING and then usually chicken out. stop lying to the readers)

mix together two egg yolks with 1/4 cup confectioner’s sugar and 2 tablespoons vanilla.

and admire how i have mad skills now in the egg-separation department. SO PRETTY OMG.

pour 1 cup heavy cream into a bowl

i love the picture of all the bubbles as the whipped cream becomes just that. it is just like magic!!

now, take two egg whites (again, see how cleanly those separated from the yolks? it’s because i rock)

and whip into soft peaks. i’ll post later on with more images of how to beat egg whites into soft peaks.

now, take the bowl of (still warm) melted goodness…

and fold in the egg yolk mixture

a little more liquidy, no?

now, fold in the whipped cream

now it looks more like mousse

fold in the egg whites last

and there you have mocha mousse! put in fridge for a few hours to chill properly, then eat all of it. for dinner.
