a healthy chocolate cake

yeah, just kidding.

i don’t do healthy, kids. if you haven’t figured that out, you clearly…well, don’t read very closely.

pre-heat the oven to 350, and get out one of those pans with a hole in the middle. tube pan? sure. grease the pan, and cut out a donut of wax paper (or parchment paper) to put on the bottom of the pan – then grease that too. trust me. it’ll make life easier later on.

in one bowl, mix together 2 1/4 cups flour, 1/2 cup cocoa, 1 1/4 teaspoons baking soda, and 1/4 teaspoon salt.

in another bowl (a big one), beat together 1 stick butter and 1 1/2 cups (!) sugar. this took a while to do, as the butter was not quite at room temperature. by the end of this endeavor, i was covered in baking ingredients. SIGH

add in two eggs and 1 teaspoon vanilla extract.

have 1 1/2 cups buttermilk at the ready….’cause you’ll be adding that in, alternating with the dry ingredients….

slowly but surely, this develops a richer chocolate color. also, i was covered in a fine mist of cocoa powder.

yeah. a lot of cocoa powder…

the final cake batter….

pour into the pan – i had to smoosh it around a little to get it evenly spread….

bake for 38 minutes (no, seriously, exactly 38 minutes…), and once it passes the toothpick test, let it sit in the pan and cool on a wire rack for 10-15 minutes.

once the first commercial break for glee hit, i ran a knife around the edges, and flipped it onto a plate

perfect! i have never had such good luck getting a cake to pop out of a pan….this is unheard of in our kitchen

also, it smells REALLY good. am excited for this one.
